A really scrummy and versatile recipe to boost your intake of protein and essential fatty acids. It can be eaten as a snack, added to your breakfast or blitzed down to be added to a smoothie.

I wanted to focus on something completely different from my usual recipes. This is a recipe for, what I have called a seed trail mix.
It is basically something different to do with your seeds. It can be used as a granola type of breakfast topped with some blue berries and some coconut milk or almond milk. It can be added to the top of stewed fruit and used as a crumble type pud with coconut yogurt or simply eaten as a very pleasant snack between meals which will not disrupt your blood sugar.
Ingredients
100grms each of flaked almonds, coconut flakes, pumpkin seeds and sunflower seeds
2 tblsps of chia seeds
2 tblsps of ground flax seeds
1 tblsp of coconut oil
2 tblsps of acacia honey or agave syrup.

Method
1. Put all of the dry ingredients in a bowl. Melt the coconut oil and honey together gently without allowing to get hot.
2. Pour the coconut oil and honey over the seed mix and keep stirring until the dry ingredients are well coated. Spread on a large baking tray covered with greasproof paper or baking parchment.
3. Bake in the oven for about 20mins but mix up half way through cooking to allow an even bake.
4. Allow to cool then store in an airtight container until needed. This will keep up to 4 weeks.
I hope that some of you try this and do let me know what you think. I have eaten it all 3 ways and find it moorish and satisfying.
