Ingredients
300grms quinoa 1 1⁄2 pts boiling water 11b. chopped or shredded kale coarse stalks removed 3 tblsp pine nuts 3 tblsp raisins or dried cranberries 2 tblsps lemon juice 2 tblsps olive oil Seasoning
Method
Put quinoa in a pan and coat in 1 tblsp of olive oil by turning with a spoon. Add water and stir once. Bring to the boil then turn down to a simmer and cover with a lid. Simmer gently till all the water has been absorbed and the quinoa is soft and fluffy.
Add the kale to the pan on top of the quinoa and heat with the lid on for a few minutes so that the kale softens with the steam from the quinoa.
Add the pine nuts, raisins, lemon juice, 1 tblsp of olive oil and seasoning.
Mix thoroughly and serve hot or cold.
